Cockroaches, whether they are called German cockroach, Oriental cockroach or Australian cockroach are present world-wide.  In ships accommodations they find food and shelter and can be abundant.  Since they do not only deteriorate organoleptic quality of food (taste and smell) but equally are a vector for the transmission of  diseases, they must be systematically controlled.  Regular treatments with specialized products are recommended. Cockroaches are a cosmopolitan hazard for food hygiene. They thrive in dark warm and humid places but remain most often undetected despite their abundant presence. One can find them in kitchens, hospitals, food processing and any cafeteria. Since they are photophobic, they are mainly active at night. Cockroaches actively spread micro-organisms such as bacteria and moulds. Apart from the microbial risk, they deteriorate the quality of goods due to the unpleasant smell and taste, also called organoleptic deterioration, caused by their saliva and dung during nibbling.
